How do you select the right apertif for a tart meal?


Aperitifs come in many forms and flavors, but the idea is that they should lean toward the bitter side to stimulate the appetite. A sauvignon blanc, with its dry, sometimes citric taste would be a perfect match for most tart meals.

This basic ingredient in Mid-East cooking is also a great flavor booster to add to anything from poultry glaze to iced tea.

Simmer together 3 cups pomegranate juice, 1/2 cup lemon juice and 1/2 cup sugar until reduced to 1/3 volume. Let cool before using.

A French method of wrapping ingredients together in a paper or foil packet as a way to protect food and retain juices from the heat of the oven. Often opened table-side at fine restaurants.
