Fleur de Sel, literally the "flower of salt," is widely considered the finest salt in the world. It is the fine layer of salt that collects at the top of salt marshes and is hand-harvested along the coast of Brittany. As a result it takes on flavor and color characteristics of its surrounding environment, anything from floral taste notes to its distinct grey or pink hue.

Use: Because it is formed of smaller, quickly dissolving crystals it is often added as a finish to dishes right before they are served for an extra burst of flavor.
